Fast Food Nation Ch 9
I would most definitely change the companies that I purchased my meat from. I would do this so that the customers would be more willing to trust the establishment. Another reason I would do this, as an owner, would be that if I switched who I bought the meat from, the blame would look like it was supposed to be put more on the meat producers rather than my restaurant. To make it up to my customers I would first of all launch an ad campaign that displayed how much care we put into serving high-quality, safe meat. Secondly, I would offer anyone who had been sickened due to our meat free meals for a month, and allow them to view all areas of the restaurant so they had more peace of mind. It would be difficult to rise up from such an incident, especially since people are much more willing and likely to tell someone how horrible a restaurant was rather than how good it was. But, with the proper focus, and the likelihood that people would sooner or later forget about it, the restaurant would be able to survive.

I think your ideas for reimbursing your customers would be benificail in the long run. They deffinetely have logic behind them and would be effective in regaining your customer's loyalty.
