Chp. 9 fast food nation
I would definately switch companies in order to make sure that does not happen again. If that was to happen twice there is no way the restraunt would be to stay in buisness. A fair reimbursement would be to put some amount money towards their hospital bill but in reality theres no way a restraunt would be able to do that.

I think your realistic approach is most likely to be effective. There is only so much a company ccan do to save face after something like that without losing money.
