Yes, I would change where I bought my meat. I would also have tests done on it frequently to ensure that it will never happen again. As for reimbursing the customers who became ill by eating from my fast food joint, I would discuss a set amount of money to send them to pay off any medical bills they had acquired.

That is a really good idea, because there is a good chance that if the outbreak was severe enough you could get sued.
